Ingredients

  • 1 lb pasta
  • 1 lb prawns, peeled and deveined
  • 1 tbsp olive oil
  • 4 cloves of garlic, minced
  • 1 cup mascarpone cheese
  • Zest of 1 lemon
  • Juice of 1 lemon
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.

  2. In a large skillet, heat the olive oil over medium heat. Add the garlic and sauté for 1 minute until fragrant.

  3. Add the prawns to the skillet and cook until they turn pink and opaque, about 3-4 minutes per side. Remove the prawns from the skillet and set aside.

  4. In the same skillet, add the mascarpone cheese and lemon zest. Stir until the cheese melts and forms a creamy sauce.

  5. Add the cooked pasta and prawns back to the skillet. Toss to coat everything in the sauce and heat through.

  6. Remove from heat and stir in the lemon juice. Season with salt and pepper to taste.

  7. Serve the pasta with prawns, mascarpone, and lemon hot, garnished with fresh parsley.
