Serves:

Ingredients

  • 8 oz pasta of your choice
  • 1/4 cup pine nuts
  • 1 small head of broccoli, cut into florets
  • 1 fennel bulb, thinly sliced
  • 2 cloves of garlic, minced
  • 2 tbsp olive oil
  • 2 cans of sardines, drained and flaked
  • salt and pepper to taste
  • grated Parmesan cheese, for serving

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.

  2. In a large skillet, heat the olive oil over medium heat. Add the pine nuts and toast until lightly golden.

  3. Add the minced garlic to the skillet and cook for 1 minute.

  4. Add the sliced fennel and broccoli florets to the skillet and sauté until they are tender-crisp.

  5. Stir in the flaked sardines and season with salt and pepper to taste.

  6. Add the cooked pasta to the skillet and toss everything together until well combined.

  7. Serve the pasta with a sprinkle of grated Parmesan cheese on top.
