How To Make Tuna & Caper Orzo with Parsley

Ingredients

  • 8 oz orzo pasta
  • 2 cans of tuna, drained
  • 2 tbsp capers
  • 1/4 cup chopped fresh parsley
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Cook orzo pasta according to package instructions. Drain and set aside.

  2. In a large skillet, heat olive oil over medium heat. Add tuna and capers, cook for 2-3 minutes.

  3. Add cooked orzo to the skillet and mix well to combine.

  4. Stir in lemon juice, chopped parsley, salt, and pepper.

  5. Cook for an additional 2-3 minutes until heated through.

  6. Serve hot and garnish with additional parsley if desired.
