How To Make Tortellini With Spinach
You can't go wrong with this tortellini with spinach for a delicious dish. Cheese tortellini is covered in creamy tomato & spinach sauce.
- 16 oz cheese tortellini, (1 package)
- 14½ oz tomatoes with garlic and onion, (1 can) diced
- 1 cup fresh spinach, chopped
- ½ tsp salt
- ¼ tsp pepper
- 1½ tsp dried basil
- 1 tsp garlic, minced
- 2 tbsp all-purpose flour
- ¾ cup milk
- ¾ cup heavy cream
- ¼ cup parmesan cheese, grated
Bring a large pot of water to a boil. Add the tortellini, and cook for about 10 minutes until tender.
While the tortellini cooks, combine tomatoes, spinach, salt, pepper, basil, and garlic in a large saucepan over medium heat. Cook and stir until the mixture begins to bubble.
In a medium bowl, whisk together the flour, milk, and cream. Stir this mixture into the saucepan along with the Parmesan cheese. Heat through, then reduce heat to low, and simmer for about 2 minutes until thick.
Drain the tortellini, but do not rinse, then pour them into the saucepan with the sauce. Stir to coat, and serve. Enjoy!
