This spaghetti recipe is made flavorful with juicy tomatoes, savory olives, and sweet-minty basil to yield a fresh Italian dish that’ll whet your appetite!

  • 2lbvine ripened tomatoes,(about 6)
  • ¾lbfresh mozzarella,salted
  • cupfresh basil,chopped
  • ½cupblack olives,halved and pitted
  • 4tspbalsamic vinegar
  • tspsalt
  • ½tspfresh ground black pepper
  • 1lbspaghetti
  • ½cupolive oil
  • 3garlic cloves


  1. In a large glass or stainless-steel bowl, combine the chopped tomatoes with the mozzarella, basil, olives, balsamic vinegar, salt, and pepper.

  2. In a large pot of boiling, salted water, cook the spaghetti for about 12 minutes until just done. Drain, add to the tomato mixture, and toss.

  3. Heat the oil in a small frying pan over moderately low heat. Add the garlic and cook, stirring, for 1 minute.

  4. Pour the oil over the pasta and toss again.

  5. Serve warm and enjoy!
