
How To Make Three Cheeses and Red Bell Pepper Fusilli
Have a deliciously cheesy meal with this fusilli recipe that has full and solid flavors from fontina, mozzarella, and parmesan, as well as red bell peppers.

Ingredients
- 4tbspbutter
- 2red bell peppers
- 1tspsalt
- ¾lbfusilli
- ¼lbfontina
- 3ozmozzarella
- 6tbspparmesan,grated
- ¼tspfresh ground black pepper
Instructions

In a medium frying pan, melt 1 tablespoon of butter over moderately low heat.

Add the bell peppers and ¼ teaspoon of salt and cook for about 10 minutes until soft.

Heat the broiler.

Butter a large shallow baking dish.

In a large pot of boiling, salted water, cook the fusilli for about 13 minutes until just done.

Drain and return to the hot pot.

Toss the pasta with the remaining 3 tablespoons butter and ¾ teaspoon of salt, the sautéed bell peppers, fontina, mozzarella, 3 tablespoons of parmesan, and black pepper.

Transfer the pasta to the prepared baking dish and sprinkle the remaining 3 tablespoons of parmesan over the top.

Broil for 3 to 4 minutes until the top starts to brown.

Serve with additional parmesan.
Recipe Notes
Cheese often turns stringy when tossed with hot pasta. Broiling the dish after tossing melts the strings into a smooth sauce.
