How To Make Sweet Potato Gnocchi

Ingredients

  • 2 large sweet potatoes
  • 2 cups all-purpose flour
  • 1 egg
  • 1 tsp salt
  • ½ tsp nutmeg (optional)
  • Your choice of sauce

Instructions

  1. Preheat the oven to 400°F (200°C). Pierce the sweet potatoes with a fork, place on a baking sheet, and bake for 45 minutes or until soft.

  2. Allow the sweet potatoes to cool slightly, then peel off the skin and mash them in a large bowl.

  3. Add the flour, egg, salt, and nutmeg (if using) to the sweet potato mash. Mix well until the dough comes together.

  4. Divide the dough into four equal parts. Roll each part into a long rope about 1 inch thick.

  5. Cut each rope into 1-inch pieces. If desired, use a fork to create ridges on each piece.

  6. Bring a large pot of salted water to a boil. Drop the gnocchi into the boiling water and cook for 2-3 minutes, or until they float to the surface.

  7. Using a slotted spoon, transfer the cooked gnocchi to a serving dish.

  8. Serve the sweet potato gnocchi with your favorite sauce, such as marinara, pesto, or butter and sage.
