Ingredients

  • 1 medium spaghetti squash
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 2 cloves of garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Grated Parmesan cheese, for garnish
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and remove the seeds with a spoon.

  2. Place the spaghetti squash halves on a baking sheet, cut side down. Bake for 30 minutes or until the flesh is tender and easily scraped with a fork.

  3. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until fragrant, about 2 minutes.

  4. Add the bell peppers and zucchini, and cook until they are tender-crisp, about 5 minutes.

  5. Using a fork, scrape the flesh of the spaghetti squash into the skillet and toss with the vegetables. Season with Italian seasoning, salt, and pepper.

  6. Cook for an additional 2-3 minutes, until everything is well combined and heated through.

  7. Serve the spaghetti squash sauté garnished with grated Parmesan cheese and chopped parsley.
