Quick and Easy Chicken Pasta Dinner Recipe

Quick and easy meals are the perfect go-tos when you’re coming home late from work. With this simple chicken pasta recipe, you won’t even need an hour to cook. All you need is just 35 minutes and you have yourself a meal worthy of dinner. It’s also an assortment of ingredients, including chicken and mushrooms.


How To Make Quick and Easy Chicken Pasta Dinner

Ingredients

  • 1 tbsp olive oil
  • 1 lb chicken breasts, boneless and skinless, cut into 1" cubes
  • 1 onion, chopped
  • 1 ½ cup mushrooms, sliced
  • 1 tsp tomato paste
  • 1 can tomatoes, diced
  • 1 cup water
  • 1 tsp dried basil
  • 16 oz spaghetti
  • salt and pepper , to taste

Instructions

  1. In a large pot, heat olive oil over medium high heat. Add chicken cubes and cook, while stirring, for 5 to 10 minutes or until chicken begins to brown.

  2. Remove chicken chunks to a bowl leaving as much of the oil as possible in the pan. Add the onion and mushrooms to pot. Cook for about 5 to 7 minutes.

  3. Add tomato paste, tomatoes, water, and basil. Bring to a boil and stir in the uncooked pasta.

  4. Cover with lid, lower the heat to medium-low and cook for about 10 minutes, stirring occasionally and not letting pasta overcook.

  5. Return chicken to pan and cook for a few minutes or until the mixture is thoroughly heated. Season with salt and pepper to taste.
