Ingredients

  • 8 oz penne pasta
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1/2 tsp red pepper flakes
  • 1/4 cup vodka
  • 1 can (14 oz) crushed tomatoes
  • 1/2 cup heavy cream
  • Salt and pepper, to taste
  • Grated Parmesan cheese, for serving
  • Fresh basil leaves, for garnish

Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside.

  2. In a large saucepan, heat the olive oil over medium heat. Add the diced onion and minced garlic. Cook until the onion is softened and translucent.

  3. Add the red pepper flakes and stir for a minute to release their flavor.

  4. Pour in the vodka and let it simmer for a couple of minutes until it has reduced slightly.

  5. Add the crushed tomatoes and stir well. Season with salt and pepper to taste.

  6. Reduce the heat to low and simmer the sauce for about 10 minutes to allow the flavors to meld together.

  7. Stir in the heavy cream and heat through.

  8. Add the cooked penne pasta to the sauce and toss to coat evenly.

  9. Serve the Penne with Spicy Vodka Tomato Cream Sauce with grated Parmesan cheese and garnish with fresh basil leaves.
