How To Make Penne alla Vodka

The vodka-infused tomato sauce in this penne alla vodka adds a great depth of flavor to this pasta dish. Serve with lots of parmesan cheese!

  • 1lbpenne,cooked al dente
  • 4ozpancetta,chopped
  • 2tbspbutter
  • 4clovesgarlic,minced
  • cupvodka
  • 28ozwhole Italian tomatoes,with juices
  • ½tspred pepper flakes
  • cupheavy cream
  • ¾cupparmesan cheese,grated, divided
  • 3tbspparsley


  1. Cook garlic in butter over medium low heat until fragrant. Add pancetta and cook 2 more minutes.

  2. Add vodka and cook for 2 minutes. Stir in chili flakes and tomatoes slightly breaking up with a spoon. Simmer for 8 to 10 minutes.

  3. Add cream and cook for 5 minutes. Add penne to the sauce and cook for 1 minute to combine flavors. Season with salt and pepper.

  4. Remove from heat, stir in ½ cup parmesan cheese.

  5. Place in bowls and top with parsley and remaining parmesan cheese.
