How To Make Pasta with Roasted Broccoli, Garlic and Oil

This pasta with roasted broccoli is a great way to add some veggies to your meals. The oil, cheese, and garlic add great flavor to this simple dish.

Ingredients

  • 8ozpasta
  • lbsbroccoli florets
  • 8clovesgarlic,smashed
  • 2tbspextra virgin olive oil
  • kosher salt and fresh pepper
  • ¼cupPecorino Romano,fresh grated

Instructions

  1. Preheat oven to 450 degrees F.

  2. In a baking dish combine broccoli, olive oil, garlic, salt and pepper.

  3. Roast broccoli for about 20 minutes, tossing half way, until broccoli is browned and tender.

  4. Meanwhile, boil salted water in a large pot.

  5. Cook pasta according to package directions for al dente.

  6. Before draining, reserve 1 cup of the water from the pasta.

  7. Drain and toss pasta with broccoli.

  8. Add ½ cup of reserved pasta water (or more if necessary), Pecorino Romano, salt and pepper to taste.
