How To Make Pasta with Ham & Minty Pea Pesto

Ingredients
- 12 oz pasta
- 1 cup frozen peas
- 1/4 cup fresh mint leaves
- 1/4 cup grated Parmesan cheese
- 1/4 cup toasted pine nuts
- 2 cloves garlic, minced
- 1/4 cup olive oil
- Salt and pepper to taste
- 1 cup diced ham
Instructions

Cook the pasta according to package instructions. Add the frozen peas in the last minute of cooking. Drain and set aside.

In a food processor, combine the mint leaves, Parmesan cheese, pine nuts, garlic, olive oil, salt, and pepper. Process until smooth.

In a large skillet, heat some olive oil over medium heat. Add the diced ham and cook until crispy.

Add the cooked pasta and peas to the skillet with the ham. Pour the minty pea pesto over the pasta and toss to coat evenly.

Cook for an additional 2-3 minutes, until everything is heated through.

Serve hot and garnish with fresh mint leaves, if desired.
