
How To Make Parmesan and Spinach Orzo
Cook a delicious Italian dish with this spinach orzo made with whole wheat pasta cooked in milk and heavy cream. Ready in 25 minutes!

Ingredients
- 2½cupswhole wheat orzo,uncooked
- 2tbspextra virgin olive oil
- 6tbspyellow onion,finely chopped
- 2clovesgarlic,minced
- 2tspall purpose flour
- 1cupmilk,(2 %)
- ¼cupheavy cream
- salt and freshly ground black pepper,to taste
- 1½cupsspinach,packed, chopped
- 1tbspfresh parsley,chopped
- 3ozparmesan,(¾ cup) slightly packed, plus more for topping, finely shredded
Instructions

Cook orzo according to directions listed on the package. Meanwhile, in a medium saucepan, heat olive oil over medium heat.

Add onions and saute for about 3 minutes until tender. Add in garlic and flour and cook for 1 minute., stirring constantly

While whisking slowly, pour in milk and cream, then season with salt and pepper to taste. Bring mixture to a simmer and cook, stirring constantly until thickened.

Mix in chopped spinach and parsley and allow to heat for about 1 minute just until spinach begins to wilt, then remove from heat and stir in Parmesan.

Stir until cheese melts (returning to warm heat if needed to help melt the cheese). Stir in drained orzo.

Serve warm garnished with additional Parmesan if desired.
