How To Make Gnocchi with Tomato Sauce and Mozzarella

Ingredients
- 2 lbs of potatoes
- 2 cups of all-purpose flour
- 2 eggs
- 1 tsp of salt
- 2 cups of tomato sauce
- 1 cup of shredded mozzarella cheese
- Fresh basil leaves, for garnish
Instructions

Boil the potatoes until they are tender. Peel and mash them in a bowl.

Add the flour, eggs, and salt to the mashed potatoes, and mix until well combined.

Roll the potato mixture into long ropes, about 1 inch thick. Cut the ropes into 1-inch pieces.

Bring a pot of salted water to a boil. Drop the gnocchi into the boiling water and cook until they float to the surface, about 2-3 minutes.

In a separate saucepan, heat the tomato sauce until bubbling.

Drain the cooked gnocchi and add them to the tomato sauce. Stir gently to coat the gnocchi in the sauce.

Preheat the broiler in your oven. Transfer the coated gnocchi to a baking dish, sprinkle with shredded mozzarella cheese, and broil until the cheese is melted and bubbly, about 3-5 minutes.

Serve the gnocchi hot, garnished with fresh basil leaves.
