  • 2tbspbutter
  • 1smallonion,chopped
  • 8ozcream cheese,(1 pkg)
  • ½cupparmesan cheese,grated
  • ½cupmilk
  • mushrooms,fresh, sliced
  • 10ozfrozen spinach,(1 pkg) thawed, chopped, and drained
  • cherry tomatoes,halved, for garnish


  1. Cook tortellini according to package directions.

  2. Heat butter in a large skillet over medium heat. Stir in onion and cook until soft and translucent.

  3. Mix in cream cheese, parmesan, milk, mushrooms, and spinach.

  4. Gently mix in tortellini and cherry tomatoes with skillet contents.
