Ingredients

  • 2 lb. russet potatoes
  • 2 egg yolks
  • 1 ½ cup flour
  • Salt
  • Pepper, to taste
  • 1 jar marinara sauce, with garlic
  • oregano, for garnish

Instructions

  1. Preheat oven to 350 degrees.
  2. Bake potatoes for an hour until tender.
  3. Scrape potatoes away from skins and use a form to mash them in a large bowl.
  4. Mix in eggs, flour, salt, and pepper.
  5. Combine into a ball of dough.
  6. Roll dough out onto a floured surface and cut out gnocchi pieces.
  7. Bring a pot of water to a boil and add in gnocchi; remove from water when they rise to the surface.
