  • 16ozasparaguschopped in half
  • 10ozmushroomsliced
  • 1green pepperjulienned
  • ½onionsliced
  • 8ozgrape tomatoor cherry tomatoes, halved
  • 2garlic clovesminced
  • 1can tomatodiced
  • 1cupchicken stockor vegetable stock
  • 8ozfarfalle pasta
  • 10ozshrimpfren, tails removed, and pre-cooked: thawed in fridge
  • 1 ½cupsasiago cheesegrated
  • 2garlic cloves
  • 1lemon
  • 2tbspItalian Seasoning
  • 1tbsppepper
  • 1tspsalt
  • 1tbspolive oil
  • 1tspfresh parsleyto garnish


  1. Preheat oven to 400 degrees F.

  2. Arrange all vegetables in a baking pan and drizzle with olive oil, salt and pepper. Bake for 20 minutes. During this time, cook pasta according to directions on the box.

  3. Once sauteed, set aside vegetables and set aside pasta in a separate pot.

  4. In a frying pan, add diced tomatoes, 1 cup stock, Italian seasoning, pepper, and 1 cup asiago cheese. Add vegetables and cook, stirring frequently.

  5. Then add vegetables. Cook until hot, stirring frequently.

  6. Add shrimp and lemon juice and stir until shrimp is heated.

  7. Melt remaining asiago, garnish with parsley, sliced lemon, and serve.

  8. Enjoy!
