How To Make Sweetcorn Pancakes with Fried Eggs & Chorizo Salsa

Serves:

Ingredients

  • 1 cup all-purpose flour
  • 1 cup sweetcorn kernels
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup milk
  • 2 eggs
  • 2 tbsp melted butter
  • 4 eggs, fried
  • 1/2 cup chorizo, diced
  • 1/4 cup red onion, diced
  • 1/4 cup tomato, diced
  • 1/4 cup cilantro, chopped
  • 1 jalapeno, diced
  • Juice of 1 lime
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, mix together the flour, sweetcorn kernels, baking powder, salt, and black pepper.

  2. In a separate bowl, whisk together the milk, eggs, and melted butter.

  3. Pour the wet ingredients into the dry ingredients and stir until just combined.

  4. Heat a non-stick skillet over medium heat and lightly grease with oil or butter.

  5. Pour 1/4 cup of the pancake batter onto the skillet and spread it out into a round shape. Cook until bubbles form on the surface, then flip and cook for an additional 1-2 minutes. Repeat with the remaining batter.

  6. In a separate skillet, cook the diced chorizo until crispy. Remove from the skillet and set aside.

  7. In the same skillet, sauté the red onion and jalapeno until softened. Add the diced tomato and cook for another minute. Remove from heat and stir in the cooked chorizo, cilantro, lime juice, salt, and pepper.

  8. Serve the sweetcorn pancakes topped with a fried egg and spoonfuls of the chorizo salsa.

  9. Enjoy!
