  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/4 cup water
  • 2 tbsp melted butter
  • 2 eggs

Instructions

  1. In a mixing bowl, combine the flour, sugar, yeast, and salt.

  2. In a separate bowl, whisk together the milk, water, melted butter, and eggs.

  3. Gradually pour the wet mixture into the dry ingredients, stirring until a sticky dough forms.

  4. Knead the dough on a floured surface for about 5 minutes, until it becomes smooth and elastic.

  5. Place the dough back into the mixing bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.

  6. Preheat a griddle or non-stick skillet over medium-low heat.

  7. Punch down the dough and divide it into 4 equal portions. Shape each portion into a ball.

  8. Place the dough balls onto the griddle or skillet and cook for about 8-10 minutes on each side, until golden brown and cooked through.

  9. Remove from the heat and let the muffins cool slightly before serving.
