Ethiopian Firfir with Dried Beef (Quanta Firfir) Recipe

How To Make Ethiopian Firfir with Dried Beef (Quanta Firfir)

Ingredients

  • 200g dried beef (quanta), finely chopped
  • 4 cups of torn injera bread
  • 2 tablespoons niter kibbeh (spiced clarified butter)
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, minced
  • 2 tomatoes, diced
  • 1 tablespoon berbere spice
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 cup of water

Instructions

  1. In a large skillet, heat the niter kibbeh over medium heat.

  2. Add the chopped onion and minced garlic, and sauté until golden brown.

  3. Add the diced tomatoes, berbere spice, paprika, and salt. Cook for another 2 minutes.

  4. Add the chopped dried beef (quanta) and cook for 10 minutes, stirring occasionally.

  5. Pour in the water and bring to a simmer. Cook for another 10 minutes to tenderize the dried beef.

  6. Add the torn injera bread to the skillet and mix well until the bread is coated with the sauce.

  7. Cook for an additional 5 minutes, stirring gently to avoid breaking the injera.

  8. Serve the Ethiopian Firfir hot, garnished with chopped spring onions and a side of yogurt.
