Ingredients

  • 2 ripe bananas, mashed
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.

  2. In a large bowl, combine the mashed bananas, melted butter, and sugar.

  3. Beat in the eggs one at a time, then stir in the vanilla extract.

  4. In a separate bowl, mix together the flour, baking soda, and salt. Gradually add the dry ingredients to the banana mixture and stir until just combined.

  5. Fold in the chopped walnuts, if using.

  6. Pour the batter into the prepared loaf pan and smooth the top.

  7. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.

  8. Remove from the oven and let cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely before slicing.
