  • 4 cups Simply Potatoes Shredded Hash Browns
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onion
  • 1/4 cup diced green bell pepper
  • 4 eggs
  • Salt and pepper to taste
  • Cooking spray

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large mixing bowl, combine the Simply Potatoes Shredded Hash Browns, shredded cheddar cheese, diced onion, and diced green bell pepper. Mix well.

  3. Season the mixture with salt and pepper to taste.

  4. Lightly spray a 9×9-inch baking dish with cooking spray.

  5. Spread the hash brown mixture evenly in the baking dish.

  6. Make 4 wells in the hash brown mixture and carefully crack an egg into each well.

  7. Bake in the preheated oven for 18-20 minutes, or until the eggs are cooked to your liking and the hash browns are golden and crispy.
