  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp paprika
  • 1/4 tsp black pepper
  • 1/2 cup buttermilk
  • 1/4 cup chopped onion
  • 1/4 cup chopped jalapeno (optional)
  • Vegetable oil, for frying

Instructions

  1. In a large bowl, mix together the cornmeal, flour, baking powder, salt, sugar, garlic powder, onion powder, paprika, and black pepper.

  2. In another bowl, whisk together the buttermilk, chopped onion, and chopped jalapeno.

  3. Gradually add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.

  4. Heat vegetable oil in a deep pot or fryer to 360°F (182°C).

  5. Drop spoonfuls of the batter into the hot oil and fry until golden brown, about 2-3 minutes per side.

  6. Remove the hush puppies from the oil using a slotted spoon and drain on a paper towel-lined plate.

  7. Serve hot as a side dish or appetizer.
