How To Make Simply Pumpkin Pancakes

No breakfast is complete without hot stacks of delicious pancakes! You may not be a morning person now, but with our yummy pancake recipes you certainly will be! Serves:

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons brown sugar
  • 1 teaspoon pumpkin pie spice
  • 1 cup pumpkin puree
  • 1 1/2 cups milk
  • 2 eggs
  • 2 tablespoons melted butter
  • Maple syrup, for serving
  • Butter, for serving

Instructions

  1. In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, brown sugar, and pumpkin pie spice.

  2. In a separate bowl, combine the pumpkin puree, milk, eggs, and melted butter. Mix well.

  3. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.

  4. Heat a non-stick skillet or griddle over medium heat. Grease lightly with butter or cooking spray.

  5. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.

  6. Serve the pumpkin pancakes warm with maple syrup and butter.
