How To Make Russian Cheese Pancakes (Syrniki)

  • 500g cottage cheese
  • 2 eggs
  • 4 tbsp all-purpose flour
  • 2 tbsp sugar
  • 1 tsp vanilla extract
  • Pinch of salt
  • Vegetable oil, for frying
  • Sour cream and jam, for serving


  1. In a large bowl, combine cottage cheese, eggs, flour, sugar, vanilla extract, and salt. Mix well until smooth.

  2. Heat vegetable oil in a frying pan over medium heat.

  3. Take about a tablespoon of the cottage cheese mixture and shape it into a small pancake. Place it in the hot oil and repeat with the remaining mixture, leaving space between each pancake.

  4. Cook for 2-3 minutes until the bottom is golden brown, then flip and cook for an additional 2-3 minutes until the other side is golden brown.

  5. Transfer the cooked pancakes to a plate lined with paper towels to remove excess oil.

  6. Serve the syrniki hot with a dollop of sour cream and a spoonful of your favorite jam.
