How To Make Rice Pancakes

Ingredients

  • 1 cup rice flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 2 eggs
  • 1 cup milk
  • 2 tbsp melted butter
  • Optional toppings: syrup, fruit, or powdered sugar

Instructions

  1. In a large bowl, mix together the rice flour, baking powder, and salt.

  2. In a separate bowl, whisk together the eggs, milk, and melted butter.

  3. Pour the wet ingredients into the dry ingredients and stir until just combined.

  4. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.

  5. Pour 1/4 cup of the batter onto the skillet for each pancake.

  6. Cook for 2-3 minutes on each side, or until golden brown.

  7. Serve hot with your choice of toppings.
