How To Make Pumpkin Oat Chocolate Chip Pancakes
Studded with oats and chocolate, these chocolate chip pancakes are spiced golden goodies perfect for a fall breakfast. Whip up a batch in just 30 minutes!

Ingredients
- 1½cupsall purpose flour
- 1cupquick oats
- ⅓cupgranulated sugar
- 2tspbaking powder
- ½tspbaking soda
- ¾tspsalt
- 2tspground cinnamon
- ¼tspground nutmeg
- ¼tspground ginger
- 1½cupsbuttermilk
- ¾cuppumpkin puree,canned or fresh
- 2large eggs
- 3tbspcanola oil
- 1tspvanilla extract
- ¾cupchocolate chips
- butter,for griddle
Instructions

Preheat an electric griddle to 350 degrees F.

In a mixing bowl, whisk together the flour, oats, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger for 20 seconds. Make a well in the center of the mixture, then set aside.

In a separate mixing bowl, whisk together the buttermilk, pumpkin puree, eggs, canola oil, and vanilla extract until well blended.

Pour the pumpkin mixture into the flour mixture and whisk just until combined, then fold in the chocolate chips.

Pour about ⅓ cup of batter at a time onto the buttered griddle, then spread into an even round. Cook until the bottom is golden brown, then flip and cook opposite side until golden brown.

Serve warm with maple syrup.
