These orange buttermilk pancakes are the perfect zesty treat to start your day. The hint of citrus pairs perfectly when served with some berry syrup on top.

Ingredients

  • 1cupflour
  • pinch of salt
  • 1tspbaking powder
  • ½tspbaking soda
  • 4tbspsugar
  • 1cuplow-fat buttermilk
  • 1large egg,lightly beaten
  • 1tspvegetable oil
  • 1orange zest
  • blueberry syrup,or boysenberry syrup and powdered sugar, optional

Instructions

  1. In a bowl whisk together flour, salt, sugar, baking powder, and baking soda. In a separate bowl combine buttermilk, egg, and vegetable oil.

  2. Pour wet ingredients into dry ingredients and mix until just combined. Gently stir in orange zest.

  3. Coat a skilled or large flat bottom pan with cooking spray and heat over medium heat. Pour about ¼ cup batter onto the pan.

  4. Use a flat spatula to flip pancakes with top has bubbles and edges begin to look “dry”. Cook 1 to 2 more minutes.

  5. Repeat with remaining batter. Serve warm with optional syrup and powdered sugar.
