Lemon Baked Pancake with Berry Sauce Recipe

How To Make Lemon Baked Pancake with Berry Sauce

Lemon-infused baked pancake is zesty, fluffy and tastes perfect with some homemade berry sauce and whipped cream on the side.

Total: 35 minutes



For Berry Sauce:

  • 5cupsfrozen berries,(1 bag) or fresh
  • ½cupwater,plus 2 tbsp, divided
  • ½cuppure maple syrup
  • 2tbspcorn starch

For Pancake:

  • cupsall purpose flour
  • 1large egg
  • 1cupmilk
  • 1tspvanilla
  • 1tspbaking powder
  • ½tspbaking soda
  • 1lemon juice
  • 2lemon zest


  1. To a large pot, add berries, half cup water, and maple syrup. Bring to a simmer over medium heat, and cook until berries are heated through and sauce is bubbly.

  2. Stir together 2 tablespoons water and corn starch, and slowly stir into the sauce while cooking to thicken. Remove from the heat and set aside until ready to serve or refrigerate for later.

  3. Preheat oven to 350 degrees F and grease a 9-inch pie plate or round cake pan.

  4. In a large bowl, combine flour, egg, milk, vanilla, baking powder, baking soda, lemon juice and zest with a whisk.

  5. Pour into prepared pan and bake for 23 to 25 minutes until a toothpick inserted in the center comes out clean.

  6. Slice into wedges and serve warm with berry sauce and whipped cream or yogurt as desired.
