How To Make Johnnycakes

No breakfast is complete without hot stacks of delicious pancakes! You may not be a morning person now, but with our yummy pancake recipes you certainly will be! There’re easy recipes for all kinds of different pancakes. We have thick and thin pancakes and ones with fruits like blueberries and banana. Don’t forget fluffy, Japanese-inspired pancakes! Serves:

Ingredients

  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons sugar
  • 1 cup milk
  • 2 tablespoons melted butter
  • 1 large egg

Instructions

  1. In a large bowl, mix together the cornmeal, flour, baking powder, salt, and sugar.

  2. In a separate bowl, whisk together the milk, melted butter, and egg.

  3. Pour the wet ingredients into the dry ingredients and stir until just combined.

  4. Heat a griddle or large non-stick skillet over medium heat and grease with butter or cooking spray.

  5. Pour 1/4 cup of the batter onto the griddle for each pancake. Cook until bubbles form on the surface, then flip and cook for an additional 1-2 minutes, or until golden brown.

  6. Repeat with the remaining batter.

  7. Serve the Johnnycakes warm with maple syrup or your favorite toppings.
