How To Make Fluffy Gluten-Free Pancakes Recipe

Ingredients
- 1 cup gluten-free all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1/4 cup unsweetened applesauce
- 2 eggs
- 1 teaspoon vanilla extract
Instructions

In a large mixing bowl, whisk together the gluten-free all-purpose flour, sugar, baking powder, baking soda, and salt.

In a separate bowl, whisk together the buttermilk, applesauce, eggs, and vanilla extract.

Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

Heat a non-stick skillet or griddle over medium heat. Grease with cooking spray or a small amount of oil.

Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes, or until golden brown.

Repeat with the remaining batter.

Serve the pancakes hot with your favorite toppings, such as maple syrup, fresh fruit, or whipped cream.
