
How To Make Eggnog Pancakes
Extend the Christmas vibes by preparing this pancake recipe made fluffy and moist by eggnog. If you have excess eggnog from the night before, use it!

Ingredients
- 2cupsall-purpose flour
- 4tspbaking powder
- ½tspsalt
- ½tspground nutmeg
- 2cupseggnog
- 2largeeggs
- 3tbspbuttermelted
- ½tsprum extract
- Maple syrupfor serving
Instructions

Preheat an electric griddle to 350 degrees F. In a mixing bowl whisk together flour, baking powder, salt and nutmeg. Make a well in mixture then set aside.

In a separate mixing bowl, whisk together eggnog, eggs, butter, and rum extract until well blended. Pour wet mixture into the dry mixture and whisk just until combined.

Pour batter onto a buttered griddle, spread batter into an even round.

Cook until bottom is golden brown then lift, butter griddle once more, flip pancake and cook opposite side until golden brown. Serve warm with butter and maple syrup.
