Preparation: 10 minutes
Cooking: 20 minutes
Total: 30 minutes

Serves:

Ingredients

  • 1 cup all-purpose flour
  • 2 eggs
  • 1 1/4 cups milk
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp dried thyme
  • 1/4 tsp dried oregano
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 cup grated Parmesan cheese
  • 1 cup cooked and diced chicken
  • 1 cup sliced mushrooms
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh parsley

Instructions

  1. In a large bowl, whisk together the flour, eggs, milk, salt, black pepper, thyme, oregano, garlic powder, and onion powder until smooth.

  2. Heat a non-stick skillet over medium heat and lightly grease with cooking spray or butter.

  3. Pour 1/4 cup of the batter into the skillet and swirl it around to create an even, thin layer.

  4. Cook for 1-2 minutes until the edges start to lift and the bottom is lightly golden. Flip the crêpe and cook for another 1-2 minutes.

  5. Remove the crêpe from the skillet and repeat with the remaining batter, making sure to grease the skillet between each crêpe.

  6. In a separate skillet, cook the chicken and mushrooms until they are cooked through and lightly browned.

  7. To assemble the crêpes, place a spoonful of the chicken and mushroom mixture onto each crêpe. Sprinkle with Parmesan cheese and mozzarella cheese.

  8. Roll up the crêpes and place them in a baking dish. Sprinkle with additional cheese if desired.

  9. Bake in a preheated oven at 350°F (175°C) for 10 minutes, or until the cheese is melted and bubbly.

  10. Garnish with chopped fresh parsley before serving.
