Ingredients

  • 1cupsorghum flour
  • ½cupunsweetened almond milk
  • 1egg white
  • 1tbsporange juice
  • 2tspstevia sweetener,such as Truvia®
  • 1tsporange zest
  • pinchground nutmeg
  • 1cupcranberries,frozen, thawed
  • cooking spray

Instructions

  1. Mix sorghum flour, almond milk, egg white, orange juice, stevia sweetener, orange zest, and nutmeg together in a bowl.

  2. Fold cranberries gently into the batter.

  3. Spray a large skillet with cooking spray; heat over medium-high heat.

  4. Reduce heat to medium; pour 1/4 cup batter into the skillet.

  5. Cook until bubbles start to form and bottom is lightly browned, 2 to 3 minutes.

  6. Flip and cook for 2 to 3 minutes more.

  7. Transfer to a cooling rack. Repeat with remaining batter.
