How To Make Buttermilk Oatmeal Pancakes

Ingredients
- 1 cup rolled oats
- 2 cups buttermilk
- 2 eggs
- 2 tablespoons melted butter
- 2 tablespoons sugar
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Instructions

In a large mixing bowl, combine the rolled oats and buttermilk. Let it sit for 10 minutes to allow the oats to soften.

In a separate bowl, whisk together the eggs, melted butter, and sugar. Add this to the oat mixture and stir well.

In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the wet mixture and stir until just combined. Do not overmix, a few lumps are okay.

Heat a lightly greased griddle or frying pan over medium heat. Pour 1/4 cup of batter onto the hot surface for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes, or until golden brown.

Repeat with the remaining batter, adding more butter or oil to the pan as needed.

Serve the pancakes warm with your favorite toppings such as maple syrup, fresh fruits, or whipped cream.
