How To Make Blueberry Oatmeal Pancakes

Ingredients
- 1 cup oats
- 1 cup milk
- 2 eggs
- 1/4 cup flour
- 2 tbsp honey
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1 cup blueberries
- Cooking spray or butter for greasing
Instructions

In a bowl, mix together oats and milk. Let it sit for 5 minutes to soften.

In another bowl, whisk eggs. Add in flour, honey, baking powder, cinnamon, and salt. Mix well.

Add the oat mixture to the egg mixture and stir until well combined.

Gently fold in the blueberries.

Heat a non-stick skillet or griddle over medium heat. Spray with cooking spray or lightly grease with butter.

Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes.

Repeat with the remaining batter.

Serve the pancakes warm with maple syrup and extra blueberries on top.
