How To Make Blueberry & Lemon Pancakes

Serves:

Ingredients

  • 2 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 1/2 cups milk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tbsp melted butter
  • 1 cup fresh blueberries
  • Zest of 1 lemon

Instructions

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

  2. In a separate bowl, whisk together the milk, eggs, vanilla extract, and melted butter.

  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix. Gently fold in the blueberries and lemon zest.

  4. Heat a non-stick skillet or griddle over medium heat. Grease with butter or cooking spray.

  5. Use a 1/4 cup measuring cup to scoop the pancake batter onto the hot skillet. Cook until bubbles form on the surface, then flip and cook until golden brown.

  6. Serve the pancakes warm with maple syrup and extra blueberries on top.
