How To Make Blue Cornmeal Pancakes

Ingredients
- 1 cup blue cornmeal
- 1 cup all-purpose flour
- 2 tbsp sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1 1/4 cups milk
- 2 large eggs
- 2 tbsp melted butter
- Optional toppings: maple syrup, fresh berries
Instructions

In a large bowl, whisk together the blue cornmeal, all-purpose flour, sugar, baking powder, and salt.

In a separate bowl, whisk together the milk, eggs, and melted butter.

Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix, there may be some lumps.

Heat a non-stick skillet or griddle over medium heat. Pour 1/4 cup of batter onto the skillet for each pancake.

Cook until bubbles form on the surface of the pancake, then flip and cook until the other side is golden brown.

Serve the pancakes hot with maple syrup and fresh berries, if desired.
