  • 1cupall purpose flour,spooned and leveled
  • 2tbspsugar
  • tspbaking powder
  • ½tspbaking soda
  • ½tspcoarse salt
  • cupsbuttermilk
  • 2tbspunsalted butter,melted
  • 1large egg
  • 8slicesbacon


  1. Preheat griddle to 200 degrees F.

  2. Whisk all dry ingredients together in a bowl (flour, sugar, baking powder, baking soda, and salt).

  3. In a separate bowl, whisk together wet ingredients (buttermilk, melted butter, and egg).

  4. Whisk dry and wet mixtures together until moistened, with small to medium lumps.

  5. Cook bacon on a griddle over medium-high until both sides are golden and crisp. Drain bacon on paper towels; reserving about 1 teaspoon fat from griddle.

  6. Add batter, half a cup at a time, to a skillet over medium heat. Top with a slice of bacon.

  7. Cook for about 2 minutes on each side until golden. Repeat with remaining batter, adding more bacon fat if needed.

  8. Serve bacon side up, topped with maple syrup.
