How To Make Smoky Sausage & Black Bean Chilli

Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 jalapeno pepper, seeded and minced
  • 8 oz smoked sausage, sliced
  • 2 tsp ground cumin
  • 1 tsp chili powder
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) black beans, drained and rinsed
  • 1 cup chicken broth
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (for garnish)
  • Shredded cheese, sour cream, and tortilla chips (optional toppings)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion, minced garlic, and diced bell peppers. Cook until they start to soften, about 5 minutes.

  2. Add the sliced smoked sausage, minced jalapeno pepper, ground cumin, and chili powder to the pot. Cook for another 5 minutes, stirring occasionally.

  3. Pour in the diced tomatoes, black beans, and chicken broth. Season with salt and pepper to taste. Stir everything together and bring the mixture to a simmer.

  4. Reduce the heat to low and let the chili simmer, uncovered, for 30 minutes, stirring occasionally.

  5. After 30 minutes, taste and adjust the seasoning if needed. If you prefer a thicker chili, use a potato masher or the back of a spoon to lightly mash some of the black beans against the side of the pot.

  6. Serve the smoky sausage and black bean chili hot, garnished with chopped cilantro. Optional toppings include shredded cheese, sour cream, and tortilla chips.
