Frequently Asked Questions

What does buttermilk do for fried chicken?

Marinating chicken in buttermilk helps make the meat become moist and tender. It contains certain enzymes and acids that help break down protein in chicken meat. It also has many uses aside from being a great meat tenderizer, so you should definitely learn how to make buttermilk at home for easy access to it anytime you want!

Why isn’t my fried chicken crispy?

It might be because your heat is too low. If this is the case, oil permeates into the chicken skin, making it too dense and soggy. So we suggest turning your heat up to medium-high to make sure they turn out nice and crunchy. Another way to do it is by pre-cooking the chicken using a pressure cooker before frying so it doesn’t need to stay in oil as long to ensure a crispy finish.

What makes good fried chicken?

A good fried chicken uses a mix of dark and white meat, and is marinated long and seasoned well. Afterwards, it is cooked at the right temperature using oils that have a high smoke point, such as canola, palm or sunflower oil. Our Golden Corral fried chicken recipe is a good example of all of this.
