How To Make Savory Roasted Sweet Potatoes with Parmesan, Garlic and Herbs
Roasted sweet potatoes are a rustic autumn side dish that comes together easily. In this recipe, they’re flavored with garlic, parmesan, thyme, and parsley.

Ingredients
- 2½lbssweet potatoes,peeled (optional), diced into 1-inch cubes
- 3tbspolive oil,plus more for serving
- 4garlic cloves,minced
- 1½tbspfresh thyme leaves,chopped
- salt and freshly ground black pepper
- 1½tbspfresh parsley leaves,chopped
- ⅓cupparmesan,finely grated
- butter,melted, or more olive oil, optional
Instructions

Preheat the oven to 400 degrees F.

In a small mixing bowl, stir together olive oil, garlic, and thyme.

Place the potatoes in a mound on baking sheet, then pour the mixture over the potatoes. Season with salt and pepper to taste and toss to evenly coat. Spread into an even layer.

Roast in the preheated oven for about 30 minutes until tender, tossing once halfway through.

Remove from oven, drizzle and toss with more olive oil, then immediately sprinkle with parmesan.

Sprinkle with parsley and serve immediately. Enjoy!
