Pulled Pork Loaded Baked Potatoes Recipe

Ingredients

  • 4 large russet potatoes
  • 2 tbsp olive oil
  • 2 tsp kosher salt
  • ½ tsp black pepper
  • 1 cup barbecue sauce, (optional)
  • 4 cup pulled pork
  • butter
  • 2 cup cheddar cheese, shredded
  • sour cream
  • green onions
  • 1 jalapeno, sliced

Instructions

  1. Preheat oven to 400 degrees.
  2. Wash and dry potatoes, poke several holes in the potatoes with a fork.
  3. Rub olive oil over potatoes and sprinkle generously with salt and pepper.
  4. Bake for 1 hour or until tender with a fork.
  5. Slice each potato lengthwise about 3/4 of the way through. Push the sides inward to open the potato.
  6. Add butter and cheese, pulled pork sour cream and green onions, and sliced jalapeno.
