Ingredients

  • 4 medium-sized tomatoes, halved
  • 4-5 fresh basil leaves, chopped
  • 4 large eggs
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Place the halved tomatoes on a baking dish, cut side up.

  3. Add chopped basil leaves on top of each tomato.

  4. Crack an egg in the hollow part of each tomato.

  5. Sprinkle salt and black pepper on each egg.

  6. Drizzle olive oil on top of the eggs.

  7. Bake in the preheated oven for 15-20 mins or until eggs are set.

  8. Remove from oven and serve hot.
