How To Make Mediterranean Baked Eggs

A flavorful dish with eggs submerged in tomato sauce, topped with feta cheese and olives.

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 1 tsp paprika
  • 1 tsp cumin
  • 1/2 tsp salt
  • 4 eggs
  • 1/4 cup crumbled feta cheese
  • 1 tbsp sliced kalamata olives
  • 1 tbsp chopped parsley

Instructions

  1. Preheat oven to 375°F.

  2. Heat olive oil in a skillet over medium heat. Add onion and garlic, sauté until softened.

  3. Add diced tomatoes, paprika, cumin, and salt. Simmer for 10 minutes.

  4. Transfer tomato mixture to a baking dish. Crack eggs into the tomato sauce.

  5. Bake in the oven for 15-20 minutes, until the whites are set and the yolks are still runny.

  6. Sprinkle feta cheese, kalamata olives, and parsley on top of the eggs.

  7. Serve with crusty bread.
