Ground Beef-Stuffed Potatoes Recipe


Serve these ground beef stuffed potatoes for a hearty side dish or snack. Enjoy potatoes with ground beef, cheese, and sour cream.

  • 6 baking potatoes, medium
  • 1 lb ground beef
  • 2 tbsp onion, chopped
  • 1⁄3 cup sour cream
  • 4 oz green chiles, chopped, (1 can)
  • 3 tbsp butter
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp garlic powder
  • ½ tsp chili powder
  • 3⁄4 cup cheddar cheese, shredded


  1. Bake potatoes at 375° for 1 hour or until tender. Cool.
  2. Meanwhile, in a large skillet, cook the beef and onion over medium heat until the meat is no longer pink; crumble beef; drain.
  3. Cut a thin slice off the top of each potato. Carefully scoop out pulp, leaving a thin shell; place pulp in a bowl.
  4. Add sour cream, chiles, butter, Worcestershire sauce, salt, garlic powder and chili powder; mash or beat.
  5. Stir in meat mixture until combined. Stuff into potato shells.
  6. Place filled potatoes on an ungreased baking sheet. Sprinkle with cheese.
  7. Bake at 350° for 10 to 15 minutes or until heated through.
