Salmon-in-a-Snap Recipe

This baked salmon recipe is simple and won’t take long to cook. Eating salmon provides you with a good amount of Omega-3 fatty acids. With orange and lemon-pepper, this easy recipe prepares great salmon without the help of a grill.

Ingredients

  • 1 nonstick cooking spray
  • 4 salmon fillets, 1-inch-thick , about 1 lb.
  • ½ tsp lemon-pepper seasoning , or 1/4 tsp. freshly ground black pepper
  • 2 tsp reduced-sodium soy sauce
  • 1 medium orange, halved and very thinly sliced
  • 2 cup broccoli florets, small
  • 1 cup chicken broth, reduced-sodium
  • ¾ cup water
  • 1 tsp minced garlic, or bottled minced roasted garlic
  • 1 cup couscous

Instructions

  1. Lightly coat a shallow baking pan with cooking spray; set aside.

  2. Season salmon fillets with lemon-pepper seasoning. Arrange fillets in prepared pan.

  3. Drizzle with the soy sauce. Top with orange slices.

  4. Bake, covered, in a 450 degree F oven for 8 to 12 minutes or until fish just flakes easily when tested with a fork.

  5. Meanwhile, in a 2- qt. saucepan bring broccoli, chicken broth, water, and garlic just to boiling.

  6. Cook, covered, about 3 minutes or until broccoli is barely crisp-tender. Stir in couscous.

  7. Remove from heat; cover and let stand 5 minutes. Serve fish over hot cooked couscous and broccoli.
