How To Make Prawn & Mussel Pies

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 200g prawns, peeled and deveined
  • 200g mussels, cleaned and debearded
  • 200ml fish stock
  • 200ml heavy cream
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 sheet of puff pastry, thawed
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. In a large pan, heat the olive oil over medium heat. Add the onion and garlic and cook until softened.

  3. Add the prawns and mussels to the pan and cook for 2-3 minutes, until the prawns turn pink and the mussels open.

  4. Remove the prawns and mussels from the pan and set aside.

  5. Pour the fish stock and heavy cream into the pan, and sprinkle in the dried thyme. Season with salt and pepper. Simmer for 5 minutes.

  6. Return the prawns and mussels to the pan, stirring to coat them with the sauce. Simmer for another 2 minutes.

  7. Divide the prawn and mussel mixture evenly among 4 individual pie dishes.

  8. Cut out circles of puff pastry slightly larger than the pie dishes. Place a circle of pastry on top of each dish, pressing the edges to seal.

  9. Brush the pastry with beaten egg for a golden finish.

  10. Bake in the preheated oven for 20-25 minutes, until the pastry is puffed up and golden.

  11. Serve the prawn and mussel pies hot, garnished with some fresh thyme leaves.
