How To Make Potato Sausage

Add a dish to your arsenal of one-pot meals with this potato sausage recipe. It's flavored with peppers, onions, and Italian seasoning.

  • smoked sausage, 1 package, cut into 1-inch slices
  • 3 lb Terrific Trio Little Potatoes, 1 package, sliced in half
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 red bell pepper, or orange bell pepper, cut into 1-inch pieces
  • 1 onion, medium, sliced
  • 2 tsp. garlic, minced
  • ¼ cup chicken stock
  • 1 tbsp. olive oil
  • 1 tsp. dried rosemary
  • 1 tsp. dried thyme
  • salt, to taste
  • pepper, to taste


  1. Preheat oven to 400 degrees F.

  2. Combine sausage, potatoes, bell peppers, onion, garlic, chicken broth, olive oil, rosemary, thyme and salt & pepper in a large bowl.
  3. Stir well to make sure everything is coated with seasonings.
  4. Pour mixture into a large cast iron pan or 9x13-inch baking dish.

  5. Place in the oven (uncovered).

  6. Bake for 30 minutes or until potatoes are lightly browned and vegetables are tender.
  7. Give the mixture a gentle stir after removing from the oven. Then serve!
